Some of them choose this diet by feeling pity for the animals, others due to the environmental questions, or, simply, to adopt a healthier lifestyle. The fact is that we, who are not accustomed to this kind of food, get desperate when we will hostess a vegan guest at our home, but today I am going to teach you some recipes to make impressed those guests who do not eat animal derivates, in fact, they are so tasteful that I think you will adopt that in your day by day.
What vegan do not eat
The people who are vegans do not consume anything of animal origin, therefore, meat, fish, milk, eggs, and honey are out. It means that they neither eat cheese, cream’s milk, butter nor condensed milk. Lucky, nowadays there are many stores with vegetable alternatives to replacing any of these ingredients, here in The USA they are very common, and in Brazil, this reality is easily accessible in the big cities’ supermarkets, or in the stores of natural products. In case you do not find it next your home, you can buy it through online commerce. But be cool, the recipes that I will teach don’t take any ingredient which is difficult to find.
It is important to remember that many courses of our daily are already originally vegans, as is the case of the “very Brazilian” rice and beans (since that you do not put bacon on it), what, besides, it is super nutritive. Some international dishes like Ratatouille, Pasta in tomato sauce (pasta without eggs), Moroccan couscous, Babaganoush, Hummus, and an infinity of other wonders.
Complete vegan meal
Today’s recipes are, in fact, a completely vegan meal, from the entrée to dessert, they are dishes with easy ingredients to find, that will make your guests very impressed. For the entrée I have prepared a Vegan Tartare, the main course will be a Roasted Chickpea stuffed with Mushrooms, and as dessert a Chocolate Mousse what was made with avocado.
Vegan Tartare Recipe
Vegan Tartare Recipe Ingredients
50g chopped strawberry
50g of chopped red pepper
50g chopped cherry tomatoes
01 teaspoon of scraped beet - just to add a little color
1/2 chopped onion (50% white, 50% purple)
02 chopped cucumber pickles
01 teaspoon of “ceboullete” (thin chives)
01 teaspoon of caper
01 teaspoon mustard
01 teaspoon Worcestershire sauce
Eureka lemon zest
Olive Oil as you want
Oil
Mode of preparing the Vegan Tartare
Chop the red peppers in very small pieces, the scraped beet, cherry tomatoes, and strawberries. We will need to take the water from these ingredients for that they get to be dried until the time to arrange the plate, for this, do a “bed” of paper towel, spread out these ingredients, and put salt. Let them there dehydrating for about 10 minutes. Meanwhile, let's chop the other ingredients. At the sequence, mix everything, add the spices, and stir to incorporate the flavors.
You know that I like to neat at the presentation, so I use those round molds to shape Tartare, if you do not have it, you can improvise with a big mug, for example. To finalize, I make a “rain” of eureka lemon zest that gives a touch of special smelt. I have also used small basil leaves, ceboullete, and arugula for decorating.
This is a delicious, perfume and healthiness entrée.
I need to remember you that some Worcestershire brands have fish in its composition, so, read the label, before buying it to guarantee that it is really vegan.
Vegan Roast Recipe
Ingredients for the roast dough:
300g of cooked chickpeas
¼ cup of cooked chickpea cooking water
¼ cup of olive oil
1 onion
Leeks - about 5 cm
2 garlic cloves
1/4 cup very small cubed bell pepper
Pepperoni pepper to taste
1/4 teaspoon of cumin
1 cup breadcrumbs
Stuffing ingredient
250g of fresh mushroom
2 tablespoons olive oil
1 onion
1 clove of garlic
15 smoked almonds, or any other nut
1 teaspoon of smoked paprika
1 teaspoon of salt
Black pepper to taste
Sauce Ingredients
Olive oil thread
1/2 onion
1 clove of garlic
2 tablespoons brown sugar
100g of tomato extract
1/4 teaspoon of cumin
1/2 teaspoon of smoked paprika
1 pinch of powder smoke - optional
1 tablespoon of vinegar
1 tablespoon of shoyu (Japanese soya sauce)
1 teaspoon of Dijon mustard
Black pepper to taste
How to prepare Vegan Roast Recipe
Sauté the chopped onion, leeks, garlic, and peppers, when it is a little bit golden, reserve it.
In a vegetable processor, mix the chickpeas without water, breadcrumbs, and olive oil, until to form a little flour (farofa). Done it, transfer it to a dish, and mix it with the sautéed peppers. Ad ¼ cup of chickpeas cooking water, from now on it is literal “hands-on” because it is the easiest way to mix, get squeezing it until form a homogeneous dough.
Drizzle the dough with a little olive oil and set it aside, while we prepare the stuffing, which is very simple, it is just to sauté the mushroom, previously chopped, in the olive oil with onion and garlic, after that add the spices and almonds.
I like to do this roast in a baking tray of English cake which is rectangular and high, thereby it gets very beautiful, but it can be in any, but it is important to be tall because it is a stuffed roast. Place the dough on the bottom of the tray and lateral, this part is easier to do by hands, thereby we get molding. Add the mushroom stuffing in the middle, cover with the rest of the dough. Take it to the oven preheated for 40 minutes at 200°C / 392°F.
While it roasts, let’s do a barbecue sauce.
It is enough sautéing the garlic and onion, add the brown sugar, and in the sequence all the other ingredients. Cook that for 5 minutes. Then beat in a blender for the sauce to be very smooth.
Once the roast is ready, just unmold and drizzle with the barbecue sauce on top when serving.

For not failure with your vegan guests, read the ingredient list of the chocolate for seeing that it has no milk. The line Hershey's Special Dark, which is the brand that I used in this video, is vegan, so, you can use it without fear.
