Easy and complete menu for Good Friday

Hello guys! As we are in Holy Week, I have prepared an easy and complete menu for you to celebrate with your family, without expending half a day in the kitchen. Regardless of the region of each one, Good Friday has already become a tradition to eat a good cod watered into olive oil, is not it true. How about a delicious apricot pudding as desert That`s delicious!

They are recipes with a “taste” from Portugal, that just to think about it, I have already missed this beautiful country that I love it. By the way, I have a wonderful video playlist about Portugal. As we are talking about cod, I recommend a special video, that I have recorded in the restaurant of Victor, located in a smallness village called “São João de Rei”, this place is so special that was visited by writers Jorge Amado and Zelia Gatai, who is Mr. Amado’s wife.

So, let’s go to that matters, starting by cod.

Cod recipe

Ingredients for cod

6 desalted cod slices
1 bunch of basil
2 boxes of cherry tomatoes
1 small glass of chopped black olives
6 Medium zucchinis cut into thin strips
Salt as you like
Olive as much your taste
Garlic

How to prepare Cod

Start tempering cod slices with salt and olive oil, then take it to the oven for approximately 20 minutes at 180ºC (or 350ºF if you are in the EUA).

Meanwhile, we will get preparing the accompaniments. Cut zucchinis cut into so thin strips, like if you got to prepare spaghetti, after that braise with olive oil, garlic, and salt. But it is very rapid just for getting the zucchinis at “al dente”, which means slightly braised.

In sequence, we prepare the sauce, which is very simple, it is enough to braise the tomatoes, previously chopped, with olive oil and black olives, fry a little bit for incorporating the flavor, and add a cup of water (in the same measure of a cup of coffee). I like the sauce with big pieces. Done that, reserve it.

To let the basil leaves crunchy, we will fry them. Just put a little olive oil into a hot fryer and add the leaves. It is very fast, guys.

Take the cod out of the oven and let’s set the dishes. I love this part! Haha.

The idea is to make the dish very beautiful so that we start to “taste” with eyes, so, I suggest you place the braised zucchinis in a little tray and serve right on the plate. Place the cod slices on top of this “bed” of zucchinis, so garnish with tomato sauce, and finalize with basil.

This is a tasteful cod recipe; a good wine is enough to accompany. In fact, did you know that red wines can harmonize perfectly with cod? This tip came from @smartwines. According to them, this is a fish with a lot of fat, so it gets along with a wine with a lot of tannins like reds.

Egg withe's Pudding Recipe with Apricot

The cod recipe is very light, thereby we have the fair right to enjoy a wonderful dessert! And the white pudding with apricots is guaranteed success. A beautiful dessert, which mixes sweet and sour, and at the same time is crunchy. Guys, follow me, it's so good.

White Pudding Ingredients with Apricot

06 Egg whites
06 tablespoons of sugar
150g of apricot
Whipped cream to decorate
Almonds to taste
Butter to grease the form

But if you are a little lazy, or not very patient, I will give you an extra recipe tip. Truly, it is not really a recipe, but a different way to serve the good old ice cream. Did you get excited? So, come on.

To make it beautiful you will only need ice cream, a Pascal fruitcake, and some fruits of your choice. Then you cut some slices of Pascal fruitcake into cubes, take it to the oven until it becomes a toast, then just assemble a very nice dish with ice cream, fruits, and these toasts. It looks beautiful, tasty, and very elegant.

Here in this video, I used panettone, but the result is the same. Look how chic it is!
